Or in my case, Carrot Orange and medium sized muffins! That will teach me to ‘judge’ what 100g of grated Beetroot looks like, rather than weighing it (who has time for that). I also missed the fact that I had to use a mini muffin case-oops!
Whilst Bella was at Pre-School and Flo napped (for 20 minutes!), I had a go at making these Ruby Red Mini Muffins from the Ella’s Kitchen The First Foods Book; The Purple One. It was a bit of a wing it job, because I ordered Greek Yoghurt rather than Natural Yoghurt and my Feta cheese was substituted with Parmesan Cheese (I shop online), so this time it was a bit of an experiment and the girls are my Guinea Pugs (lucky them).
Flo is first to taste test, but she had much more fun continually throwing it on the floor! When she did finally taste a bit, she did go ‘mmmmmm’ so I suppose that’s a good sign! The only things I would change (apart from using the correct ingredients and a mini muffin case), is to leave out the Thyme or at least half the amount. I found the flavour too overbearing. And to also add more Beetroot, to get that gorgeous Ruby Red colour.
Here is the recipe if you want to give it a try! Although mine didn’t turn out anything like Ella’s Kitchen, they taste yummy so that must count for something right?! Lucky Bella is going to taste one of these bad boys for lunch! I wonder how that will go down?
