This gem of a recipe is not only perfect for fussy toddlers, it’s also a great breakfast idea for the whole family. Taken from Annabel Karmel’s Quick & Easy Toddler Recipes Cookbook, these scrummy pancakes were so easy to make. My supermarket shop unfortunately forgot to deliver my Blueberries, so I had to make them without, but they still tasted amazing.

I made enough, so that we could all have them for breakfast (Daddy included) and there were a lot of ‘mmmms’ being muttered, whilst everyone stuffed their faces. Quite literally in Flo’s case. Pancakes are brilliant because you can throw whatever you like into the mixture. You could add all sorts of fruit including banana, dried fruit or if you’re feeling naughty, chocolate chips.

Both girl’s really enjoyed their pancakes for breakfast this morning and I have a feeling it’s going to become a regular request. You can also batch cook these and pop them into the freezer. They would also make a great dessert, teamed with ice cream.
