I really enjoy cooking for the girls and encouraging them to try new things. I’ve been all over Pinterest lately and have been finding brilliant recipes that both girls can eat-always a bonus! I came across this gem, Courgette & Potato Bake by Little Grazers.

It was super quick and easy to make, which was very much appreciated, especially when I had Flo screaming because she was hangry and to punish me, she continuously rammed me in her walker. She’s so stealthy and always manages to sneak up on you. I teamed Bella’s Courgette & Potato Bake with pasta with Philadelphia, peas and sweet corn and cherry tomatoes.

To be fair, she did at least try it and said it was nice but that was her first and last bite. We all know how Toddlers love trying new foods, said no parent ever. Flo on the other hand couldn’t stuff it into her face any quicker. This is her usual reaction to most foods.

Here is the recipe details if you want to try it at home.

Ingredients

  • 1 Courgette grated and squeezed of excess juice
  • 1 Russett Potato grated and squeezed of excess juice
  • 1 clove of Garlic crushed
  • 1 tbsp of softened unsalted butter
  • 1 egg beaten
  • Black pepper
  • 30g Parmesan or cheese of your choice

Method

  • Preheat oven to 200 degrees
  • Add the Courgette, Potato, Garlic, butter and beaten egg to a bowl, mix and combine.
  • Season with a little pepper
  • Add mixture to a oven proof dish and push down well
  • Top with grated cheese and pop into the oven for 20-25 minutes.
  • Slice & serve

It’s definitely a good recipe to try! It’s actually quite tasty and it’s a light bite, so perfect for this hot weather. It’s also great for feeding kids on the go. Just pop in the microwave to heat up or they could eat it cold.
