In case you haven’t noticed, I’ve been a busy bee in the kitchen this week. I’ve really enjoyed cooking new food for the girls to try. Bella has grown incredibly fussy when it comes to mealtimes, I suppose it comes with the job description of being a 3-year-old.

Thankfully the one food she does eat is pasta, so I gave this Rigatoni With Tomato, Basil and Mozzarella recipe a try. Taken from the Real Food Kids Love Cook Book by Annabel Karmel, this recipe was a massive hit with both girls. I nearly fell off my chair when Bella declared that she “loved it” #mumwin.

This is such a quick and easy recipe to follow. I managed to knock up the sauce whilst the girls played so that it was ready to go at dinner time. The more simple dinner time is the better. I heated the sauce up whilst the Rigatoni cooked and then mixed it all together.

I teamed up the Rigatoni with Garlic Bread and Carrot sticks and the girls devoured it. The sauce is also freezable so I’ve popped a couple of portions in the freezer for another day. I’ve never used Mascarpone in pasta sauces before and I was surprised at how creamy it makes it, so I’ll definitely use it more often.
