I came across this recipe on Clare’s Little Tots and thought it would be a great one to try. Savoury muffins are great for feeding babies on the go and they encourage the baby to feed themselves. They are also great for tricking toddlers into eating vegetables because they look like cakes-mwhahaha.
They are really easy to make. It’s simply a case of boiling the broccoli, mixing the ingredients together, spoon the mixture into a muffin case and bake for 25/30 minutes. I’ll pop the ingredient list and method below.
Ingredients
- 8oz Plain Flour
- 5oz grated cheese
- 1 small head of broccoli, chopped
- 6fl oz whole milk
- 3 tbsp olive oil
- 3 tbsp baking powder
- 1 large egg, beaten
Method
- Preheat oven to 180 degrees
- Cook broccoli until tender and then mash with back of fork
- In a mixing bowl mix together flour, baking powder, cooked broccoli and cheese
- Add the chopped tomatoes, egg, oil and milk and mix well
- Spoon the mixture into a greased 12 hole muffin tin (the consistency should be moist, sticky dough that is quite thick)
- Bake for around 25/30 minutes or until golden
- Transfer to wire rack to cool
I’ve come to realise that I’m a bit of a Bridget Jones when it comes to baking. This time I forgot to add the milk. I mean, seriously?! I don’t know how I managed to miss one of the crucial ingredients! I blame broken sleep.
Luckily they didn’t turn out too bad. Flo didn’t seem to care! She still stuffed the muffin into her mouth but threw most of it on the floor (maybe she did that intentionally). Her baby buddy Dylan also had a good chomp and he seemed to enjoy it.
