I’ve recently made Broccoli and cheese muffins for the girls and they both really enjoyed them. I love how versatile muffins are. They can be eaten hot or cold, they make a perfect snack and they are suitable for babies, toddlers and big kids-perfect for appeasing the whole family.

I’ve been on the look out for various muffin recipe ideas for the girls to try. I often struggle with lunch ideas so I thought I’d share my findings with you, in the hope that it will give inspiration and beat that lunchtime rut. I can’t wait to try all of these recipes.

Rainbow Vegetable Savoury Muffins https://www.eatsamazing.co.uk

This recipe and the top two images were taken from Eats Amazing, a fabulous website full of family friendly recipes. I think I’m going to try this recipe next as it’s packed full of goodness.

Ingredients

  • 225g Self Raising Flour
  • 1 small carrot
  • 2 spring onions
  • 1/2 red pepper
  • 2 tbsp Cannes sweetcorn
  • 100g mature cheddar
  • 175ml milk
  • 1 large egg
  • 50ml olive oil

Method

  • Preheat oven to 200 degrees and lightly grease a 12 hole muffin tray
  • Sift the flour into a mixing bowl
  • Grate the carrot, finely chop the spring onion and red pepper and add the prepared vegetables and sweetcorn to flour
  • Grate cheese and add to mixing bowl. Stir until combined
  • In a separate bowl mix the milk, egg and oil together
  • Add to the mixing bowl and stir until completely combined
  • Divide the mixture and bake for 20 minutes until golden brown
  • Serve warm or cool on a wire rack.

Red Pepper & Cheese Muffins, https://www.amummytoo.co.uk

This recipe and image was taken from A Mummy too, a food and lifestyle blog for busy parents. This recipe sounded very tasty. I wouldn’t mind eating these myself! They are quick and simple to make and are great for popping into baby’s or toddlers snack bag.

Ingredients

  • Spray oil
  • 2 medium free range eggs
  • 150ml whole milk
  • 1 tbsp garlic purée
  • 100g butter melted
  • 225g mature cheese grated
  • 50g pine nuts
  • 1 tbsp oregano
  • 3 red peppers deseeded and chopped
  • 350g self raising flour

Method

  • Preheat oven to 200 degrees
  • Lightly grease the muffin trays with spray oil
  • Beat the eggs in a large mixing bowl
  • Add the milk, butter, garlic purée and beat again
  • Next stir 150g of the cheese, pine nuts and oregano
  • Chop the peppers in approximately 1cm pieces and add to the mixture
  • Fold in the flour-the mixture will become stodgy but don’t worry
  • Use an ice cream scoop the drop one heaped serving into each muffin hole
  • Put a pinch of cheese on top of each muffin
  • Bake for 22-25 minutes until they are just about to go brown on top
  • Cool on wire rack

Spinach & Cheese Savoury Muffins https://www.myfussyeater.com

Image and recipe found on myfussyeater.com, a brilliant website, pack full of great recipe ideas for both baby and toddler. Spinach is a super food, so these savoury muffins make a perfect lunchtime snack.

Ingredients

  • 2 medium eggs
  • 150ml milk
  • 75g melted butter
  • 150g grated mature cheddar
  • 1 spring onion chopped
  • 75g fresh baby spinach, chopped
  • 1/2 red pepper diced
  • 250g self raising flour
  • 1/2 Vegetable stock cube. Use low salt or no sodium cube

Method

  • Preheat oven to 180 degrees and lightly grease muffin tin
  • Gently whisk eggs in a large bowl and stir in the milk and melted butter. Mix in the grated cheese, spring onion, baby spinach and diced pepper
  • Finally add the flour and crumble in the stock cube and mix just enough until the ingredients have combined
  • Divide the mixture into 12 muffin cases and bake for 20-25 minutes

Bacon & Cheese Savoury Muffins, https://www.over60.com.au

I came across this recipe on Pinterest. I thought I’d include a recipe that had meat in it. These savoury muffins are probably more suitable for toddlers, because bacon is naturally salty.

Ingredients

  • 2 eggs
  • 250g self raising flour
  • 1 cup grated cheese
  • 3 rashers bacon, cooked and finely diced
  • 1 cup of milk
  • Pepper to season

Method

  • Preheat oven to 200 degrees and lightly greased the muffin tins
  • Combine flour, cheese, bacon and pepper in a mixing bowl
  • In a separate bowl whisk and milk
  • Make a well in the dry ingredients and gradually add the egg mixture. Gently mix until just combined
  • Spoon mixture into muffin tray and bake for 15-20 minutes

All of these muffin recipes are suitable for freezing, which is really handy if you want to batch cook. I can’t wait to get my bake on! Savoury muffins are also a great way to encourage, your toddlers to help in the kitchen. I hope your little ones enjoy!
