I have recently been sent a Mindful Chef box for try and I’m hooked. I’m so impressed with the quality of recipes, ingredients and service that I’m seriously considering signing up. With all this hoarding and panic buying going on, it’s also really reassuring to know that you can get great quality recipes, plus fresh ingredients delivered straight to your door.

Mindful Chef is amazing on so many levels, their meat is 100% British and grass-fed, free-range, plus UK-landed fresh fish. Their recipes are 100% gluten-free and dairy-free and there are lots of vegan recipes to choose from. You have the choice of 16 recipes each week, plus there is no contract or commitment and you can cancel at anytime. It’s a total no brainer!

I was sent two recipes to try including; Chargrilled Jerk Chicken, Salsa & Sweetcorn and Zingy Salmon, Cherry Tomatoes & Mangetout. I loved them both equally, they were both super easy and quick to make. I’ll review each recipe separately.
Chargrilled Jerk Chicken, Salsa & Sweetcorn
Each recipe is packed individually and numbered in a recyclable paper bag, with all the ingredients you need to make the dish. The meat and chilled ingredients are stored in a separate bag, which you are encouraged to return to Mindful Chef so that they can reuse. You get a weekly recipe book and you simply look for the number on your bag and find it in the book. The recipes are really easy to follow and includes cooking time, calories, fat, carbs and protein information.

The Chargrilled Jerk Chicken, Salsa and Sweetcorn was delicious and surprisingly filling. The Buckwheat makes a great alternative to salad leaves and I loved the crunchy sweet red pepper and sweetcorn, which pads it out a bit. The Jerk seasoning smelt amazing whilst the chicken fried, it would make the perfect BBQ seasoning.

The salsa had a little kick thanks to the chilli, I must admit I did leave the Coriander out as I’m not a fan. This dish makes the perfect mid week meal as it’s quick and really easy to make. I’ll definitely make this again.
Zingy Salmon, Cherry Tomatoes & Mangetout
This recipe is so fast to make, it literally takes 15 minutes, which is really convenient for busy parents. It’s also a great way to introduce fish into your weekly diet. There really isn’t much to prepare, simply wash the salad, chop the cherry tomatoes, trim the Mangetout and get ready to make the tangy dressing for the salmon.

The ginger and lime dressing is really easy to make and it’s packed full of flavour. Simply grate the ginger and add into a bowl, mix the chilli flakes, tamari, Honey add the juice from the lime and then marinate the salmon. It tastes absolutely amazing.

It was so refreshing to feel full from a meal without feeling bloated or sluggish. There are lots of different box choices to choose from including; a box for 1, 2 and a family of four and you get to choose 2 to 5 recipes. Just when you thought Mindful Chef couldn’t be anymore perfect, with every meal that is sold, they donate a school meal to a child living in poverty.
