These Spinach & Carrot Bites were a massive hit with Flo. They make the perfect lunchtime snack and are a great alternative to the go-to Potato Waffle, or those days when you’re struggling for lunchtime inspiration (story of my life). Taken from the Real Food Kids Love Cook Book by Annabel Karmel, this recipe is perfect for those independent Toddlers that want to feed themselves.

The best thing about this recipe is that it’s so quick and easy to make. Once you’ve prepared the ingredients and mix them together, you spoon mounds of the mixture onto a lined baking tray and pop it in the oven for 12 minutes. Easy peasy. I actually shaped the mixture into little balls as I thought they would be easy for Flo to pick up.

Flo wasted no time and got stuck in. She made a lot of “mmmmmm” noises so I took that as her stamp of approval. The Spinach & Carrot Bites are also freezable, helping you take the stress out of lunchtime planning.

Hopefully I can convince my very fussy three year old Daughter Bella to try these. I think I’ll tell her that they contain special Gecko (PJ Masks) powers to give her Super Gecko Muscles. It’s worth a shot, right? If you want to try this at home, here is the recipe:
